1 cup old-fashioned oats
2/3 cup toasted shredded coconut (sweetened or unsweetened)
1/2 cup peanut butter
1/2 cup ground flaxseed
1/2 cup semisweet mini chocolate chips
1/3 cup honey
1 tablespoon chia seeds (optional)
1 tsp vanilla extract

Place coconut on a pan with a silicon baking mat (or parchment paper) and bake at 350 for 10 min or until browned
Stir everything togeher.
Chill for 1-2 hours. This helps the mixture to stick.
Roll into balls.
