     Blueberry Muffins, Best Ever

Ingredients
2/3 cup white sugar
1 large egg
1/2 cup vegetable oil
1/3 cup milk
1 tsp vanilla
1 1/4 cup all purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup sour cream
 
1 cup fresh blueberries
1 TB white sugar for top

Instructions
Preheat oven to 375. Lightly grease top surface of muffin tin so muffin tops don't stick. Place eight muffin liners in pan.
Combine sugar, egg, oil, milk and vanilla in a bowl and stir until well combined. Mix flour, baking powder and salt. Add to the wet ingredients. Stir until combined. Do not over mix. Just stir until its no longer lumpy. Stir in the sour cream until well distributed. Fold in the blueberries.
Evenly distribute the batter in the muffin tin. Fill all the way to the top. This will make a high crowned muffin. If you want shorter muffins, you can fill 12 cups.
Sprinkle the tops with 1 TB of sugar. Bake for 25 minutes. If you use frozen berries, it will take about 5 minutes longer. Take them out of the oven as soon as a toothpick comes out clean.
