1. Preheat oven to 400 degrees. Lightly grease a 12
muffin tin. 2. In a small pan, melt together butter and
garlic until fragrant, 5 min. 3. In a large bowl
combine sweet potatoes, garlic, thyme, oregano,
parmesan, manchengo and a large pinch of salt and
pepper. Toss well to coat. Layer the sweet potatoes
evenly in the prepared muffin tin, stacking the layers
all the way to the top (potatoes will shrink down)
