     Spaghetti aglio e olio(spaghetti with garlic &oil)

Ingredients
1/3 cup extra virgin olive oil
6-8 garlic cloves - minced
1/4 tsp red pepper flakes
3 quarts water
1 lb spaghetti
1 tbsp and 1/4 tsp salt
3 tbsp fresh parsley or basil
 

Instructions
1. In a small saucepan, combine oil and garlic. 2. Cook over medium-low heat, stirring often with wooden spoon about 5-7 minutes. 3. Add pepper flakes.
4. In a large pot, add water and bring to a boil over high heat. 5. Add spaghetti and 1 tbsp salt to boiling water. 6. Cook until spaghetti is flexible, but very firm in the center - about 7 minutes.
7. Transfer 2 1/2 cups cooking water to measuring cup. 8. Drain pasta. 9. Add oil mixture, 1/4 tsp salt, and 2 cups cooking water to large pot. Bring to a boil over medium-high heat.
10. Add pasta until water is mostly absorbed - about 5 minutes. 11. Let pasta sit about 2 minutes off heat. 12. Stir in parsley or basil - add additional cooking water if needed. Enjoy!
