|
1. In large saucepan, bring water to boil over high
heat.
2. Place snap peas in steamer basket, if you have
one. If not, place them in water and scoop out with
slotted spoon.

3. Cover saucepan with lid. Cook snap peas about 2
minutes.
4. Remove steamer basket from saucepan OR scoop
snap peas from saucepan.
5. Let saucepan cool on cool burner for 3 minutes
before pouring water into measuring cup.

6. Measure out 2 tbsp water from measuring cup.
7. Pour water into saucepan.
8. Add shallot, vinegar, salt, and sugar to
saucepan. Whisk until sugar and salt dissolve.
9. Cook until bubbling - about 2 minutes.

10. Reduce heat to low. Add 1 piece butter to
saucepan - whisk constantly until butter is melted
and incorporated. Repeat with 2nd piece of butter.
11. Add snap peas to saucepan; stir; cook until
peas are heated through about 2 minutes.
