     Prime Rib roast

Ingredients
4 lb ribeye roast
1/4 cup unsalted butter, softened
1 Tbsp fresh ground black pepper
1 tsp Herbs de Provence
Kosher salt to taste
Multiply ingredients for larger roasts
 

Instructions
Calculate cook time. Multiply exact weight of roast X5 minutes. Example 5.35 lb X5 = 26.75 minutes, round up to 27 minutes total cook time. Place prime rib on a plate and bring to room temperature, 3 - 5 hours. When to bring to room temp? Start with Serving time, minus 2 hrs resting in oven, minus cook time, minus 3 - 5 hrs to room temperature.
Preheat oven to 500 degrees. Combine butter, pepper, herbes de provence in a bowl, mix until well blended. Spread butter mixture evenly over entire roast. Season generously with kosher salt.
Roast the meat uncovered in preheated oven for the calculated time based on its weight. Turn oven off and, leaving the roast in the oven with door closed, let the roast sit for 2 hours.
Remove roast from oven, slice and serve.
