Mix the first 6 ingredients together by starting
with creaming the butter(we recommend the butter
option) and Sugar together and then adding egg
yolks, vanilla, salt and flour. Mix thoroughly.
Roll into balls about the size of a teaspoon.

Use a fork to lightly beat egg whites in a bowl.
Place the chopped pecans in ANOTHER DREDGING bowl.
Dip the dough balls in the egg whites and then Dip
into the pecans to cover the ball completely.

We found using parchment paper the best surface.
No need to grease the cookie sheet.Bake at 375 degrees for 5 minutes.
Remove the
cookies and depress gently the middle of the
cookie.
They were hot so we used a small spoon but thumb
is good if you can handle the temp.
Return the cookies into the oven until a golden brown.

OVERBAKE as the pecans can be too burnt.
Now place the frosting in
the middle of the thumb print once the cookies are cooled.
POWDERED SUGAR FROSTING RECIPE
4 tbs softened butter
2-3 cups powdered sugar
Vanilla
A little milk
Return the cookies into the oven until a golden
brown.
