     Gazpacho

Ingredients
500 gr ripe tomato
50 gr green bell pepper
40 gr cucumber
30 gr onion
20 gr bread
1/2 clove garlic
1 Tbs sherry wine vinegar
1 dash ground cumin
generous pinch of salt
 
60 ml extra virgin olive oil

Instructions
Add into a blender the tomato, pepper, cucumber, onion and bread, all roughly chopped. Chop and add the garlic, blend thoroughly until smooth. Pass the liquid through a fine mesh strainer letting the gazpacho drip through. Return to the blender and season to taste with salt, vinegar and cumin. Blend again pouring in the oil in a steady stream to emulsify.
Chill. Serve with a garnish of diced cucumber, pepper and croutons sprinkled over the top.
