     Seafood - Baked tilapia with tomatoes

Ingredients
1 pint cherry tomatoes, sliced in half
1 large shallot, thinly sliced
3 cloves minced garlic
1 small lemon, thinly sliced into rings
2 Tbl. olive oil, divided
3/4 tsp. kosher salt
4 oz. block feta cheese (See Note)
1 llb. tilapia
1 /tbl. italian seasoning
 
pinch of red pepper flakes
1/2 tsp. smoked paprika
2 Tbl. drained capers
chopped fresh parsley for garnish
black pepper

Instructions
Preheat oven to 425 deg. Chop tomatoes, shallot, garlic and lemon and place them in the bottom of baking dish, and mix them with One tablespoon olive oil, 1/4 tsp. salt and black pepper.
Crumble the feta cheese and add it to the baking dish. Toss gently to combine. Pat the tilapia dry, rub with One tablespoon olive oil and 1/2 tsp. kosher salt, split among the fish pieces.
Place fish on top of vegetables in dish. Sprinkle with italian seasoning, black pepper, pepper flakes and paprika. Sprinkle capers over the top.
Bake for 20 to 25 minutes, until fish is flaky. Remove lemon slices when serving. NOTE; I used goat cheese instead of Feta. I think Gruyere would also be a good choice.
