     Almond jam tarts

1 C very soft butter
1 C powdered sugar
1 tsp baking powder
1.2 tsp salt
2 tsp vanilla extract
1/2 tsp almond extract
1 C almond flour
1/4 C corn starch
1 1/2 C all purpose flour
6 tablespoons (blackberry or preferred flavor) jam
powdered sugar

Preheat oven to 350. Line a 12 C muffin pan with cupcake liners. Line a sheet pan with foil . Set both pans aside
Combine the butter and powdered sugar with blender on low until smooth. Add the vanilla and almond and stir. Add baking powder, salt and almond flour, corn starch, stir until all flour is mixed. Add the flour and stir, scraping the sides and bottom of the bowl until all of the flour is incorporated and the dough comes together. It will be a fairly stiff dough.
Divide the dough into 12 portions Roll into a ball and place each portion into each muffin cup. Using your thumb push a dent into center. Place the muffin pan on the foil lined sheet and transfer to oven. Bake 18 -20 minutes or until the tarts are a light golden brown.
Remove tarts from oven, reinforce indentations. Allow the tarts to cool in the pan for 15 minutes then remove them to a cooling rack. When completely cool, sprinkle with powdered sugar and fill indentations with jam. Use about 1 1/2 tsp of jam per tart. Delicious
