     Parsley Biscuits

Ingredients
2 cups(10oz/315g) all-purpose (plain) flour
1/2 teaspoons salt
1 tablespoon baking powder
3 tablespoons finely chopped fresh parsley
1/2cup (4 oz/125g) vegetable shortening
1/2 cup (4 fl oz/125 ml) milk
1/4 cup (2 fl oz/60 ml) heavy (double) cream
finely shredded zest of 1 lemon
 

Instructions
Preheat Oven to 425F (220C). Grease 1 or 2 baking sheets or pans and set aside. In a bowl stir together the flour, salt, baking powder, lemon, zest and pasley. add the shortening and, using a pastry blender, fingertips or 2 knives, mix together until the mixture resembles oatmeal. add the milk and cream using and, using a fork, mix together until the mixture forms a mass and holds together.
Gather up the dough into a ball, place o n a floured board and knead a few times. flatten the dough with your hands and roll it out with a rolling pin until it is thick.
Using a round cutter or glass in diameter, cut ou as many biscuits as possible. place on the prepared plans about 1/4inch apart.
Gather up scraps of dpugh and press together to make more biscuits. place in the oven and bake until golden and light, about 15 minutes. Serve hot.
