     Roasted Autumn Vegetables

Ingredients
1lb yellow potatoes cut into chunks
1/2lb baby carrots halved lenthwise
1 cup red onion cut into wedges
olive oil
1/2lb haricots verts or green beans trimmed
 

Instructions
preheat oven 450 degrees and grease baking sheet
toss potatoes, carrots and onion in oil to coat. season with salt and pepper. roast 30 minutes
Meanwhile toss beans with oil, salt, and papper. after 30 minutesput beans on roasted vegetables and cook another 15 minutes.
