1 1/4 c unsweetened apple juice or cider, heated to boiling
ground nutmeg
ground cinnamon
2 tbl low-cal unsalted margarine
1 stick of cinnamon
1 tsp pure vanilla extract
several strips lemon peel
6 tbl low-fat apple yogurt
light whipped topping
Instructions
core the apples and peel them halfway down from the small end, reserving the apple skins. arrange the apples, peeled ends up, in a 2 qt rectangular baking dish. squeeze half lemon juice over them and then place 1 tbl of apple juice in cavity of each.
dust apples gentely with cinnamon and nutmeg and dot each cavity with 1 tsp of the margarine. pour remaining boiling apple juice into baking dish. add cinnamon stick, vanilla extract, lemon peel, and reserved apple skins to the baking dish.
Bake, uncovered in a 350F oven for 40min, or until apples are tender when pierced with a fork. baste the apples with the dish juices every 10min during cooking period
set the apples on a serving dish and pour the liquid from the baking dish into a small saucepan
and boil rapidly until it becomes a light syrup. strain the liquid over the apples and top each serving with 1 tbl yogurt
