     Carrot Cake

Ingredients
2 Cups Sugar
4 Eggs
1 1/3 Cup oil
2 Cup Flour
2 Tsp Baking Soda
3 Tsp Baking Powder
2 Tsp Cinnamon
3 1/2 Cups Carrotts
Dash salt
 
1 Tsp Vanilla
1/2 Cup Drained Crushed Pineapple
1 Cup Nuts

Instructions
Grease & Four round pans or tube pan 1) beat sugar, eggs, until thick light color. 2) mix together dry ingredients. Stir into egg mixture. 3) Fold in carrots, pineapple, nuts. 4) Spoon batter into pans
Bake 350 Degrees for 35-40 Minutes
Cream Cheese Frosting- 8 oz cream cheese, 1/2 Cup melted butter, 2 Tsp Vanilla, 16oz powder sugar. Beat all ingredients till well blended.
Crushed Pineapple is optional in iceing
