For manicotti, beat 4 eggs with water. Add flour and butter and
blend. Grease a small fry pan only for the first one. Heat pan and pour
a scant 1/4 cup batter into pan, tilt pan to spread batter to edges.
Cook 30 seconds on first side. Flip over then 10 seconds on second
side. Put onto paper towels. Stack until ready to fill.
For filling - Mix ingredients except pasta sauce into a bowl. Place a Tablespoon onto
center of prepared crepe. Roll up and place in a baking dish that has
sauce already on the bottom. Cover all the manicotti with more
sauce. Bake 20 to 30 minutes at 350 deg.
Filled manicotti can be frozen on a cookie sheet. When frozen place
into freezer bag.
