     Potato Salad

Ingredients
Potatoes - Russett or Yukon
Onion - White, Yellow, Green, Red
Celery
Optional- Carrot, Radish, other garden veggies
Mayo
Mustard
Optional- cider vinegar, sugar
Salt & Pepper
Optional Garnishes- chives, green onions, chopped parsley, paprika
 

Instructions
Peel and dice the potatoes. Cover with water and boil on the stovetop. Be careful not to overcook. Once done, rinse them briefly in cold water. Chill in fridge (or in freezer, if pressed for time!). Chop onion, celery, carrot, radish, etc. Add to potatoes.
Mix mayo and mustard in your preferred ratio. If unsure, start with a ratio of about 8-1. If desired, add a squirt of cider vinegar (tangy) or a tsp of sugar (sweet) to the mayo mix. Add lots of salt and peper and stir well.
Stir mayo dressing over the potato mixture. Garnish and serve.
