     Baked Mullet With Sausage

Ingredients
1 mullet or other mild flavored fish
1/4 pound smoked sausage, thinly sliced
1 medium onion sliced
2 tablespoons or margarine
Paprika
Lemon Wedges
 

Instructions
Have fish man slip mullet almost through and clean it. Fish will be juicier of baked with head on. Preheat oven to 375 degrees. Place fish in shallow baking pan or broiler pan lined with foil. Fill body cavity with sausage and onion. Push fish back into shape and if necessary close with wooded tooth picks. Bake 45 mintues or until fish flakes. Spread butter and sprinkle paprika. Broil for 3-4 min. or until glazed. Lift fish from pan and remove head and finally garnish with lemon
