If using for a Pork Loin, use 4-5 lb roast. Trim
fat cap leaving thin layer. Preheat the smoker to
225. Coat the pork with olive oil and sprinkle
evenly with dry rub on all sides. Place the pork
in the smoker and smoke until the internal tem
reackes 145. It can take 2-3 hours. Let rest 10-15
min before slicing.
