Heat olive oil in a large large over medium high
heat. Season chicken with salt, pepper, and garlic or
any all purpose seasoning mix. Place your chicken in
the pot and sear on both sides for 2-3 minutes.
Remove and set aside. Add in your onion, celery,
carrots, and bell pepper and saute for 3-4 minutes.
Next, add back in your chicken breasts, chicken broth,
Italian seasoning, and smoked paprika. Bring to a
boil, then cover and lower the heat to medium-low and
simmer for 15 minutes, or until the chicken is cooked
through. Remove the chicken and shred it. Set aside.
Bring the soup back up to boiling and cook the
tortellini according to package directions. If you need
to add more chicken broth at this time you can.
Once the tortellini is cooked through, turn off the
heat. Stir in your heavy cream and add your parmesan
cheese. Add the shredded chicken back in. Taste and
adjust seasoning, as needed.
