     Shawarma

Ingredients
1/2 c olive oil (I don't use as I cook on Parchment)
Juice of 1 Lg lemon and zest
3 colves garlic minced
2 tsp kosher salt
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground pepper
1/2 tsp tumeric
1/4 tsp cinnamon
 
1/4 tsp cayenne pepper
2 pounds boneless skinless thighs
1-2 lg cooking onions sliced
Yogurt sauce- 1/2 c Greek yogurt
Juice of 1/2 lemon
1 T olive oil
2 cloves garlic minced
kosher salt to taste
pinch red pepper flakes optional

Instructions
Mix spices together then massage into chicken i large zippered bag. Add onion and massage again. Place in fridge for at least 24 hours. Preheat oven to 400. Place contents of bag on parchment lined sheet pan. Cook for 30 min.
I have used tzatziki in place of the yogurt sauce if I don't want to make it
Can be used in a wrap or on a salad or served w grains or rice.
