Additional 1/2 cup cornbread crumbs, buttered for topping
2 eggs beaten
1 small onion chopped
1/4 cup milk
3 Tablespoons butter, melted
cheddar cheese, grated
Instructions
Boil eggplant until tender, drain and mash. Add eggs, onion,salt,pepper,milk, 3/4 cup cornbread crumbs, butter and cheese. Mix well. Pour into buttered casserole. Sprinkle top with buttered crumbs. Bake at 350 for 25-30 minutes. Very good!!
