     Tortellini Soup

Ingredients
1 lb italian Sausage
1 medium onion finely chopped
3 cloves garlic minced
1 tsp each of basil, oregano, parsley
1/2 tsp thyme
2 pinches crushed red pepper
2 cups beef broth
1.5 tbsps tomato paste
1 can fire roasted tomatoes
 
4 cups veggie broth
10 oz refrigerated tortellini
3 cups arugula or spinach

Instructions
Brown sausage. Add onion until soft. Turn heat to low and add garlic, spices, cook for 1 minute stirring constantly.
In small bowl whisk tomato paste with 1/2 cup beef broth. Add veggie broth, remaining beef broth, fire roasted tomatoes and thinned out tomato paste. Increase heat to medium low and simmer 3-4 mins.
Add cheese tortellini and simmer for 10-15 mins until tortellinis are cooked. Remove pan from heat and stir in spinach. Add salt/pepper to taste. Spring each bowl with fresh grated parmesan.
Serving Suggestions
I halved this recipe from the original and made it vegetarian with fields sausage and veggie broth.
