     Spinach Ricotta Bake

Ingredients
!2 Oz Penne Pasta
1 lb Spinach
1c Ricotta
1 c shredded Mozzarella ( Bagged Italian)
1/2 c Grated Parmesan
1 Egg beaten
2 Cloves Garlic minced
1-1 1/2 tsp Italian seasoning
Salt & Pepper
 
2 c Marinara sauce

Instructions
Preheat oven to 350
Cook pasta drain and set aside. Save some pasta water. In lg skillet heat 1-2 T EVO over med heat. Sauté garlic till fragrant about 1 min. Add in spinach & cook till wilted. Remove from heat and let cool. In a lg bowl combine ricotta 1/2 of the Mozza and beaten egg Italian seasoning and S&P Combine well.
In a Lg buttered pan put a thin layer of marinara. Add half of the pasta. Top with spinach mixture. Add rest of pasta. Top with rest of Marinara sauce. Sprinkle with remaining Mozza and Parmesan.
Cover with tin foil. Bake at 350 for 25 min uncover and bake 15 min. Allow to cool for 5-10 min. Really liked this. easier than doing shells. Tastes similar. a
