3 tbs SAF instant yeast plus l tsp

approximately 16-18 cups of flour. May be too much
For a milder whole wheat flavor use 3-4 cups white flour.
1 cup wheat equals 1 1/2 cups flour
Instructions
In Bosch mixer bowl with dough hook, place warm
water, oil, honey, salt, enhancer, gluten and
yeast. For Bosch universal plus machine use speed
2 for mixing. Add cups of flour (most with 30
seconds) until dough begins to pull away from the
sides of the bowl. Exact amount of flour is
determined by the water to flour ratio. This ratio
is dependent upon the moisture and protein levels
in your wheat, as well as daily weather
conditions. Do not add too much flour - the dough
should be sticky at this point. Set a timer and
continue to mix the dough for 8 minutes.
Oil hands, remove dough from the mixer onto an
oiled counter, and divide the dough into 2 lb
loaves (using a scale is recommended) You will
have 4 = 2 lb. loaves. 5 loaves = approximately 1
lb 11 oz. If using smaller pans, dough should fill
1/2 of the pan, no more. Slap the dough to relax
it, shape the loaf, and drop into a well-greased
pan (butter coated of Vegelene spray). Cover with
light towel and let rise until double in size (no
more than 1 inch about the rim of the pan) for 45-
60 minutes. Bake in 350 degree preheated over for
30 minutes. Cool on cooking rack before placing
into bread bag.
BREADSTICKS- Roll dough into finger-thin ropes and
cut to desired length. Brush with melted butter.
Sprinkle with desired topping - Parmesan Cheese,
Garlic Salt or Powder, Salad Seasoning, Italian
Seasoning, Sesame Seeds. Place on lighly greased
baking sheet. Let rise 10[-15 minutes. Bake at
375 degrees for 15 -18 minutes.
CINNAMON PULL APARTS- Divide dough into small
balls. Dip in melted butter, then cinnamon sugar
mixture (1/2 tbs cinnamon to 1/2 cup brown sugar.)
Place balls in layers (2 layers deep) in a
buttered pan. Let rise until double. Bake at 350
degrees for 20-25 minutes.
