Take out frozen Kateifi dough and thaw for 2-3
hours. Preheat oven to 350. Shred the cheese. Shred
the Kataifi dough by placing in a food processor or
cut with a knife. Once shredded massage the butter
into the kataifi making sure it is well mixed.

Grease the bottom of the pan with some butter. Use
a 9 inch pan.Spread 3/4 of the kataifi into bottom
of pan and press down with palm of hand or glass.
Place cheese over kataifi and press down with palm
of hand. Top with remaining kataifi and press down
again. Bake at 350 for 30-40 minutes until brown
and crispy ,

Take it out of the oven and turn onto a bigger dish.
Drizzle over simple syrup and make a ring of
pistachios around dessert. Serve with extra syrup.

Simple syrup. Bring 2 C sugar and 1 C water to a
boil add 1 tbl lemon juice and simmer 8-10 minutes.
Remove from heat and add 2 tsp rose water and 1 tsp
orange blossom water.
