     Thai Butternut Soup

Ingredients
2 Large Butternut Squash, cut in large pieces
1 t. Chopped Ginger
1 Large Onion
3/4 t. Smoked Paprika
1/2 t. Cinnamon
1/2 t. Cardamom
1/2 t. Curry Powder
3-4 Cups Water
3 Pinches Stevia or 3 T Maple Syrup
 
2 t. Salt to taste
1/4 t. Black Pepper
1 Can Coconut Milk
Cilantro

Instructions
Skin the butternut squash and cut into large pieces. Chop the onion into large pieces. Place all the ingredience with the exception of the coconut milk, cream and cilantro into a preasure cooker. Cook on hight for 8 - 10 minutes.
With an immersion blender purate the ingredeints. Add the coconut milk. Add more salt and stevia if needed.
Serve with cilantro and a swirl of cream on top.
