Remove membrane from back and trim fatty parts
Rub with some yellow mustard
Coat with spice mix
|

cook at 225-250 for 4 1/2 to 5 hours
Use bend test . Meat should pull back from bone
ends also. you can always cut a bone off and see if
they need more cooking

After 2 hours, mist with apple juice every 45
minutes
When they are done brush with sauce
Turn up heat so sauce will set.

They can be wrapped in foil, and covered with a
towel in a cooler to keep until time to eat.
