Heat oven to 425 deg. Mix up the dry seasonings. Put a small
amount of seasoning into the breadcrumbs on a dish. Pat the
chicken dry, dip into olive oil, and sprinkle with seasoning. Then
take the chicken and roll it into the seasoned breadcrumbs.
Line a baking sheet with foil, put a rack on the baking sheet, and
spray with Pam. Put the chicken pieces on the rack and bake for
40 minutes. Internal temperature should be. 165 deg. If you do not
use the rack you will need to turn the chicken over half way.
NOTE- We love this recipe. By putting some seasoning directly
onto the chicken, and a little in the breading, you get a lot of
flavor.
