     EHS FCS Easy Rice and Bean Wrap

Ingredients
2 cups water
2 cups canned black beans, rinsed and drained
1 cup mild salsa
1 pkg. taco seasoning mix
2 cups instant rice
8 flour tortillas
Sour cream for topping
Shredded Cheddar cheese for topping
 

Instructions
In a medium saucepan, add water, beans, salsa, and taco seasoning mix. Stir and heat to a boil.
Add instant rice. Cover and cook on low heat for 5 minutes or until rice is tender.
Spoon mixture onto flour tortillas. Top with sour cream and/or cheese. Fold up 2 sides to enclose filling. Roll up burrito style.
Serving Suggestions
Add 1 cup corn and/or 1/2 lb ground beef.
