1 sm hot chili pepper, such as jalapeno or serrano (seeded, deveined, and finely diced)
juice of 1-2 limes (or to taste)
salt to taste
2 Tbs. finely chopped fresh cilantro
Instructions
Mix together all the ingredients except the cilantro in a nonreactive medium-size mixing bowl. You can make this salsa a few hours before serving time; just stir in the cilantro at the last minute.
Mound the Blue Corn Chips in one pottery bowl, the salsa in another, and serve with plenty of icy Mexican beer and wedges of fresh lime.
