Rinse pot roast in hot water. Cut three or four slits in center of roast and put alarge bay leaf in each slit
Sprinkle with "Seasoning Mix" and rub into roast. In large pot, heat a couple of tablespoons of oil. Brown outside of roast. Cover roast with water. Add a couple of teaspoons of the seasoning. Bring to a boil, reduce heat and simmer for 1 hour.
Add carrots and potatoes. Bring to a boil reduve heat and simmer for another hour. Remove roast and vegetables to a platter. Reserve 1-1/2 cups broth. Skim off fat and pour into a saucepan. Combine cold water and flour. Slowly whisk into broth and heat stirring constantly until thickened.
