     Green salad w/ almonds and orange dressing

Ingredients
1 large head red leaf lettuce, washed, diced, chilled
1 medium purple onion, sliced into rings
1 11-oz. can mandarin oranges, drained
1 small Jicama peeled and cut into Julienne strips
4 oz. sliced almonds
3 Tbs. sugar
Orange Dressing:
1/2 tsp. grated orange peel
 
1/3 c. fresh orange juice
2 Tbs. red wine vinegar
1/2 c. vegetable oil
2 Tbs. sugar
1 Tbs. Good Seasons dry Italian dressing mix

Instructions
Place first 4 ingredients in a salad bowl, chill. In a small skillet sprinkle 3 Tbs. sugar over the almonds and cook medium heat until almonds are coated and sugar has dissolved. (They brown quickly, do not burn.) Place in a small bowl and allow to cool.
Mix dressing in a shaker jar; chill. Pour salad dressing over chilled salad and sprinkle sugared almonds over all. Toss and serve.
NOTE: I now use the packaged honey sweetened almonds you can buy in the salad section instead of sugaring my own. Much easier. Important to use fresh orange juice for dressing.
