     fettuccine alfredo

Ingredients
3 quarts water
1 teaspoon salt
1 tablespoon cooking oil optional
8 ounces packaged fettuccine
1/2 cup grated parmesan cheese
1/3 cup light cream or whipping cream,at room temperature
3 tablespoons butter or margarine, cut up and at room temperature
fresh coarselycracked black pepper
 

Instructions
in a lage saucepan or dutch oven bring water and salt to arolling boil. if desired add oil to help keep pasta separated.
add pasta a little at a time so water does nnot stop boiling. reduce the heat slightly and continue boiling uncovered stirring occasionally until pasata is al dente. allow 8 to 10 minutes for packaged fettuccine or 1 1/2 to 2 minutes for fresh pasta.
immediately drain pasta in colander. return pasta to the hot pot.
add parmesan cheese light cream or heavy cream and butter or margarine. toss gently until pasta is well-coated. transfer to warm serving dish. sprinkle with pepper serve immediately
