     Parma Ham and Parmesan Bread

Ingredients
2 cups self rising whole wheat flour
2 cups self rising all-purpose flour
1 teaspoon salt
1 teaspoon freshly ground black pepper
3 ounces Parma ham, chopped
2 tablespoons chopped fresh parsley
2 tablespoons freshly grated parmesan cheese
3 tablespoons Meaux mustard
1 ½ cups buttermilk skim milk, to glaze
 

Instructions
Preheat the oven to 400F. Flour a baking sheet. Put the whole wheat flour in a bowl and sift in the all-purpose flour, salt and pepper. Stir in the ham and parsley. Set aside about half of the grated Parmesan and add the rest of the flour mixture. Make a well in the center.
Mix the mustard and buttermilk in a pitcher, pour into the bowl and quickly mix into a soft dough.
Turn onto a well-floured surface and knead very briefly. Shape into an oval loaf and place on the baking sheet.
Brush the loaf with milk, sprinkle with the reserved Parmesan and bake for 25-30 minutes until golden brown. Cook on a wire rack.
