     Ham and Tomato Biscuits

Category   Entrees - Maindishes
Sub Category   None
Servings   12

Ingredients
2 cups self-rising flour
1 teaspoon mustard powder
1 teaspoon paprika, plus extra for topping
½ teaspoon salt
2 tablespoons soft margarine
2 ounces Black Forest ham, chopped
1 tablespoon chopped fresh basil
1/3 cup sun-dried tomatoes in oil, chopped
1/3 – ½ cup skim milk, plus extra for brushing

Instructions
Preheat the oven to 400F. Flour a large baking sheet. Sift the flour, mustard, paprika and salt into a bowl. Work in the margarine until the mixture resembles bread crumbs.
Stir in the ham, basil and sun-dried tomatoes and mix lightly. Pour in enough milk to mix to a soft dough.
Turn the dough onto a lightly floured surface, knead lightly and roll out to a 8x6-inch rectangle. Cut into 2-inch squares and arrange on the baking sheet.
Brush sparingly with milk, sprinkle with paprika and bake for 12-15 minutes. Transfer to a wire rack to cool.
