2 red bell peppers

1pkg mini potatoes

green beans

2tbs white wine vinegar

1 lemon

1tbs oregano

extra virgin olive oil

Instructions |
|
|
Roast red peppers on a cookie sheet for apx 9min, put in bowl covered with plastic wrap and steam to remove skin--remove skin and seeds
|

Boil potatoes in heavy salted water for 10-12 min, remove and cut if desired--cut in half-boil beans in same water for a few minuites
|

|
Vinagrette---combine vinegar, zest of one lemon and juice (roll to release juice), salt and peper, dried oregano, and olive oil
|
|
|
Prepration--combine chopped garlic, chopped green onions (mainly white parts),add all vegetables and top with vinagrette
|
