     Kale Soup with White Beans and Coconut Milk

Ingredients
half an onion - chopped
4 cloves of garlic
butter
2 carrots - cut in slices
1/2 cup red pepper - diced
1/2 bunch of kale - chopped
a few small tomatoes (optional, I just threw them in)
1/4 cup corn
1/4 cup white beans (or more if you want)
 
a few cups veggie broth
1 can coconut milk
oregano
red chilli flakes
salt and pepper to taste

Instructions
Saute onion and garlic in butter. Add all vegetables (but not beans), some broth and your spices. The kale needs to cook for a pretty long time, so I just kept adding broth (until I ran out and then added some water) until the kale was soft (maybe 30 mins). Then add beans and coconut milk, heat until warmed through and serve.
