2 T. canola oil

1 large onion chopped

# 6 garlic cloves, chopped

1 28 oz. plus 1 15 oz cans diced tomatoes

2/3 cup strong coffee
|
|
2/3 cup beer
|
|
1/3 cup maple syrup
|
|
2 heaping T. chili powder (more or less to taste)

1 t. cumin powder
|
|

1 T. unsweetened cocoa powder
|
|
1 t. dried oregano
|
|
1/2 t. cayenne (red) pepper
|
|
3/4 t. ground coriander
|
|
a few pinches of red pepper flakes (to taste)

3 15 oz. cans assorted beans, drained (e.g., butter, kidney, pinto)

salt and black pepper to taste

Instructions |
|
|
saute onions and garlic in heated oil over medium heat until soft (if you want to add meat of any kind, you can saute it now)

stir in all the ingredients.
|
|
|
Cover pot, reduce heat to low, and simmer for 45 minutes. Adjust the seasoning to taste, and simmer another half hour or more.
