Rinse spinach, drain and dry. Shred if desired and toss with mushrooms and onions a bowl.
Put turmeric in a separate bowl, add garlic, and whisk in oil, vinegar, oyster sauce and sugar. Note, dressing can be doubled, tripled, etc. to match amount of salad.
Pour dressing over salad and toss lightly.
