Saute chopped garlic and shallots in olive oil until sweated, add mushrooms and 2 tbsp additional olive oil if necessary. Salt and pepper to taste. Saute until mushrooms are finished. Add chives/parsely. Add white wine, reduce, add broth, reduce.
Add marscapone cheese, stir until melted and blended with mushrooms; add parmesan cheese to taste; Drain cooked penne and combine mushroom sauce and pasta; garnish with parmesan and chives/parsely. Serve.
Good variations include: using Pomi chopped tomatoes for a great tomato cream finish; add cooked sausage or cooked shrimp.
