     Toffee & Chocolate Cheesecake

Ingredients
1.5kg cream cheese
2 pt cream
13 x eggs / separated
13 x gelatine
300g good quality dark chocolate
2 tins condensed milk
teaspoon vanilla essence
250g soft brown sugar
100g castor sugar
 
3 packets digestives
1 1/2 blocks butter + 200g for toffee
1 pt cream for whipping

Instructions
make bases with crushed biscuits & melted butter. put condensed milk, sb sugar & 200g butter in pan & melt together to make toffee.
heat up 1pt cream & make a custard with egg yolks & castor sugar. cook out until coats back of a wooden spoon. add soaked gelatine.
melt choc over a bain marie & blitz cream cheese & toffee together. fold in the custard.
whip up egg whites & half a pt cream. fold these both into mix & pour into cheesecake tins.
