     Pikelets & Salsa

Ingredients
1 cup flour
1 tsp baking powder
3 tomatoes - chopped seeds removed
1/4 cup parmesan cheese
1 egg
1/2 cup milk
5 tbsp olive oil
1 medium red onion - finely chopped
1/4 cucumber
 
coriander - small amount finely chopped

Instructions
Salsa -The salsa is fairly simple. Add about 1/3 of the chopped tomatoes, the chopped cucumber, the chopped onion, coriander and 3 tbs of the olive oil into a small bowl and mix well. Tada! Salsa is done.
Pancakes -Add the flour, baking powder and a pinch of salt and pepper to a large bowl and mix together. Stir in the rest of the tomatoes, a small amount of coriander and the parmesan. -In a seperate bowl, combine 2 tbs of olive oil, egg and milk. Whisk until smooth. -Add everything together and stir into a batter.
-Heat a frying pan and add approximately 2 tbs of the batter and cook for about 6-8 minutes until cooked and browned on each side. Note: -Don't use maple syrup.........
