     Pork Chops & Tomatoe Sauce

Ingredients
4 pork chops
olive oil
3-4 thyme sprigs
3-4 rosemary springs (only leaves)
6-7 cloves of garlic (unpeeled)
1/2 red onion finely chopped
1/2 red pepper finely chopped
5-6 button mushrooms chunked
 
1 can chopped tomatoes (DRAINED)
1 tsp sugar
salt
pepper

Instructions
Pre-heat the oven to 400. Place the chops in a large dish and drizzle olive oil and scatter all the sprigs, garlic and some salt. Bake for approximately 20 minutes.
Make the sauce in the meantime. Heat some olive oil in a pan and add the onion, red pepper and mushrooms. Cook until they start to soften and then add in the can of tomatoes with the sugar. Cook for approximately 12 minutes until everything is soft and has thickened.
Remove the chops and set aside to serve, then pour the pan juices into the sauce and heat for a couple of minutes. Serve the pork with sauce poured on top.
