     Salmon Cakes

Ingredients
1 can (15 1/2 oz) salmon
1/2 cup chopped green onions
1/4 cup mayonnaise
1 Tbls dry bread crumbs
2 T lemon juice
1 egg, beaten
1/4 tsp black pepper
2 Tbls flour
1 Tbls cornmeal
 
vegetable oil

Instructions
Drain salmon, reserving 2 Tbls liquid; flake. Combine salmon, green onions, mayonnaise, bread crumbs, reserved salmon liquid, lemon juice, egg and pepper.
Cover and refrigerate at least 30 minutes. Combine flour. Mix salmon mixture and shape into small patties using about 1 Tablespoon foreach cake. Coat each with flour/cornmeal mixture.
Pan fry over medium to medium high heat 3 to4 minutes per side or until golden. Add more butter and oil to skilled as needed.
