     Peach Bar-B-Q Sauce

Ingredients
1 Lb. Fresh Peaches
3/4 Cup Chopped Sweet Onion
! 1/2 T minced fresh Jalapeno
1 T Canola Oil
1/4 C Apple Cider Vinegar
1/4 C Bourbon
2 1/2 T Honey
2 T Dijon Mustard
1 t Light Brown Sugar
 
1/4 t chili powder
1/8 t Dry Mustard
1/4 t Kosher Salt

Instructions
Peel peaches and chop coarsely.
Cook Onion, jalapeno (seeds removed for less heat) and a pinch of Kosher salt in oil in a heavy medium saucepan over medium heat, stirring occasionally, until softened, 8 to 10 minutes. Add peaches and remaining ingredients and simmer, uncovered, stirring occasionally, until peaches are very tender, about 30 minutes.
Carefully puree' in a blender or food processeor.
