     Fresh Plum Tart

Ingredients
1 prepared whole-wheat pastry crust for 9
10 large black plums
1 C finely ground low fat Vanilla Wafers or Biscotti
1/4 C packed light brown sugar
 

Instructions
Line 9" tart pan that has removable bottom with pastry crust. Trim excess crust from edges. Refrigerate crust for 30 minutes
Preheat oven to 425 degrees. Cut plums in half and discard pits,
When pastry crust is chilled, sprinkle the cookie crumbs evenly over the bottom. Lay the plum pieces over the crumbs in concentric circles so the plums touch each other. Sprinkle the brown sugar evenly over the top of the plums.
Bake for 15 minutes. Reduce oven heat to 350 degrees and bake for an additional 1 hour and 15 minutes until the plums are soft. Let tart cool to room temperature before serving.
