     Fruit Cobbler

Category   Desserts - Breads
Sub Category   None

Ingredients
1 pint berries (1 C) and 8 nectarines/peaches
OR 8 C berries/2 1-lb frozen bags
2 Tbsp flour
2 Tbsp honey
1 Tbsp lemon juice
pinch salt
1 C flour
1/4 C sugar
1/4 tsp salt

1/4 tsp baking powder
1/4 tsp baking soda
zest 1 lemon
2-3 tsp butter, chilled and cut into small pieces
3/4 C buttermilk

Instructions
Preheat oven to 375F. Place fruit into a medium bowl and add flour, honey, lemon juice, and salt. Stir to combine, pour fruit into 8x8 baking dish.
In a medium bowl, whisk flour, sugar, salt, lemon zest, baking soda and powder. Rub in butter until mixture resembles coarse sand. Stir in buttermilk to get wet dough.
Drop dough in golf-ball sized pieces evenly over fruit. (It will spread as it bakes, so don't try to cover the whole surface.)
Bake 40-45mins until juices are bubbly and topping is browned. Let stand for 30 mins before serving to let juices thicken and reabsorb.
