     Apple Pancake Red-Star Inn

Ingredients
Filling
3-4 lbs Granny Smith Apples, peeled, sliced
1/4 lb butter, melted
3/4 cup sugar
nutmeg to taste
cinnamon to taste
Batter
1 1/2 cups milk
1 1/2 cups flour
 
9 eggs
2 teaspoons sugar
pinch of salt
cinnamon/ sugar
1/4 lb butter
sugar, optional
lemon juice to taste

Instructions
Saute apples in butter. Add sugar. Cook 6 minutes or until tender. Do not overcook! Season to taste with nutmeg and cinnamon. Keep fruit warm.
Combine milk, flour, eggs, sugar, and salt. Mix well. Melt enouh butter to coat bottoms and sides of two 10-inch oven-proof skillets. Bake in preheated 500 degrees oven for 10 to 15 minutes or until pancake is brown on bottom and sides. Sides should seperate slightly from pan. Reduce heat to 400 degrees. Sprinkle pancakes with cinnamon sugar. Dot generously with butter. Bake 5 minutes. Top should brown only slightly because it will become inside of pancake. Remove sklillets from oven.
Fill half of pancake with apples. Fold. Transfer to heated platter. Sprinkle with lemon juice and sugar. Serve immediately.
Repeat procedure with remaining batter and filling. Batter and filling can be frozen. Bring batter to room temperature and heat apples before using.
Serving Suggestions
Can substitute apples for butter and powdered sugar or other fruit.
