1 c flour
|
|
3/4 c oatmeal
|

1 tsp ground cinnamon
|
|
1 c brown sugar
|
|
1/2 c butter, melted
|
|
1 c sugar
|
|
1 c water
|
|
3 tbl cornstarch
|
|
1 tsp vanilla
|
|
|
|
4-5 c sliced rhubarb (may also throw in other fruit like strawberries, peaches, blueberries)

|
vanilla ice cream or yoghurt (optional)
|

Instructions |
|
|
Combine flour, oatmeal, cinnamon, brown sugar and butter. Press 1/2 into an 8x8 pan
|

|
Cook 1 c sugar, water, corn starch and vanilla until thick. Add rhubarb and mix thoroughly.
|
|
|
Spread fruit into cake pan and top with remaining oatmeal mixture. Back at 350 degrees for 1 hour.
|
|
|
Serve warm or cold.
