     Light Chocolate Cake

Ingredients
2 cups sugar
1-3/4 cups all-purpose flour
3/4 cup cocoa
1-1/2 teaspoon baking powder
1-1/2 teaspoon soda dissolved in 1 teaspoon lemon juice
1 teaspoon salt
1/2 cup egg substitute (equal to 2 eggs)
1 cup skim milk
1/2 cup unsweetened applesauce
 
2 teaspoons vanilla
1 cup boiling water
Confectioners sugar, optional

Instructions
In a large mixing bowl, combine dry ingredients. Beat in egg substitute, milk, applesauce and vanilla. Add water; beat on medium for 2 minutes(batter will be very thin). Pour into a 13x9 cake pan that has been coated with nonstick cooking spray. Bake at 350 F for 30 minutes or until a wooden pick inserted near the center comes out clean. Cool. Lightly dust with confectioners sugar if desired.
